Michigan surf and turf fall specials???

OK fellow Michiganders, it is that time of the year when the salmon run, and the deer are pleanty.

Anybody have a special brine they care to share?

How about a special venison roast smoke recipe??

I am looking for someting to try for both. I generally use a straight up POPS brine for my salmon, but would like to tune that up a bit for the next 100 pound batch. :)

Also, I have never done a roast in the smoker, but would like to tackle that.

What say you??

I don't have a good brine recipe but I do like to put pineapple juice in mine.

 

I'm also looking for tips on a roast, think that could be excellent.

Hey cam,
I usually turn most of my venison into jerky, but would be interested to see how a roast turns out. Most of the poeple I cook for aren't fond of deer's gamey taste, so I might try some kind of buttermilk brine if we get a deer this fall. Good luck!

Buttermilk brine sounds interesting! We have a ton of salmon to smoke, and archery season next week...
