Whole Brisket From A Cow With Baked Potato, Garlic Mashed Taters, Strawberry Stuff & Special Brownies

I hadn't done a brisket in a while so I figured I'd keep my eyes open for one.

 

 

I came across some & after checking them out I picked this one.

 

 

 

It was a nice 14 lb. specimen.

 

 

 

I separated it.

 

 

 

Then gave it some rub.

 

 

 

Had to take a quick snack break while the AMNPS was getting ready...

 

 

 

And into the MES - running oak & cherry.

Do you weight the ingredients or estimate the brownie thickness to calculate the proper amount of "cure" to add to the brownies? Or is it added to the wet brine instead?

Actually you're not far off at all as stuff is added to both the wet & according to amount of brownie thumb1%20copy.gif

Then added a little more rub.
