Hey y'all.Well, I put some spares on the mutt smoker to try n pin down my rub. Every year, in my county there is a Fire n Feast Festival. This is a BBQ contest open to all first responders. Fire, EMS, Police n such. This year my FD has decided we will enter. I was involuntarily volunteered to do ribs. This will be my first competition. I decided to so with my normal sweet n heat rub I always use, dusted with an apple bourbon rub. They will be sauced for the big show. Went dry to get a good taste on the rub. Made a run to the store n walked by the meats. Found a brisket flat on sale for $9. Had to snatch it up. Snapped a few shots along the way. Comments suggestions are more than welcome

Tasty looking meat! I really wish that competitions didn't think that ribs have to be sauced. I really prefer dry ribs over sauced ones.

looks pretty good, not a big fan of spares myself..id rather do BB's. but apparently comps like the use of spares. and im also with DS on the sauce biz...im not a fan of sauced ribs either..i go back and watch old episodes of pitmasters and wonder why oh why??!!! why does everything have to be sauced in these comps?..lol.
