Hi there... My name's Bryce and I'm from Acworth, GA, which is NW of Atlanta.
New to smoking meats and sausage making. On a trip to Michigan this summer, I got hooked on Snack Sticks and wanted to start making my own since we really don't have them down here other than the mass produced big brands (slim jim, jack links, etc)
We started with a Kitchenaid grinder stuffer and soon found that the grinder is fin, but the stuffer sucks!!!! We recently upgraded to a LEM 606SS stuffer and its so much easier. We made a batch of sticks, brats, italians and breakfast sausage. A second batch of sticks are in the smoker now.
For a smoker, we got the Lowe's Masterforge knockoff of the MES30 GenII. Kinda wish we'd have gone for the 40 now, but we'll make due... I really only plan to make stuff for my family and this'll do for the 4 of us.

Welcome to the forums, Bryce!  You'll like it here... its the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything, and someone here will surely have the answer.

  Sounds like we are going down the same road together except you are a lot farther along than I am,, I want to start making my own venison sausage, Boudin, andouille   and smoked sausage...
