Bought a 30" MES for as a gift to a friend who's beach house we stay at alot. Food is a priority there and we do tons of grilling, including ribs. Got the MES Thurs night, on Friday I put a rub on some spare ribs and a pork butt to bring out Saturday morning with the surpris gift. Just before I leave home he texts me not to come to the beach as a work thing came up. Can't let the meat go to waste so his gift has cooked dinner last night and tonights is almost done.

Ribs last night were ok, it got late and they came off a little early, meat hadnt pulled back very far. 6lb pork butt has now been in there for 6 1/2 hours at 230degrees, I have alot more confidence in this. Will see soon enough, internal is just hitting 165.

The smoker is on the roof along with a Weber Kettle performer, a gas Weber Genesis for quick meals and a view of the city and statue of liberty.

Welcome. You'll love this forum. I just started smoking last fall and had limited success until I found this forum. I have learned so much from the kind members. They are generous with answers to your questions and there are a ton of great ideas in the postings. One of the ways I learned the most was posting my projects with pictures and I always got support, advice and suggestions for differing ways to do things.

 

I am sure you will love this forum as much as I do.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

I got an MES 30 in January and have gotten a ton of use out of it and love it! You won't believe the number of recipes, techniques, and great people you'll find on the site. Any time I'm smoking something new or looking for a new way to prepare something, this is the first (and really only) place I check. Happy smoking!
