Starting smoking cheese for a few weeks now and its really has been fun and doing good a great taste. I've done pepper jack, mozzarella Gouda, mild Cheddar, sharp and marble Cobby jack. I just bought some cheese cloth to wrap the cheese it been getting a little warm having to pull and put in freezer for about 10-15 min. tell hardens up some hope wrapping might get me some more time been doing three briquettes going to go to two and thinking about soaking in some wine
 
When I smoke cheese I use an AMNPS from here http://www.amazenproducts.com/  It does a great job of giving plenty of smoke with very little heat. It would be worth checking out if you like cold smoking
