Former Texan (Go Horns!)

Thread Starter
Another new smoker from Chester County, PA - West Chester. First got addicted to BBQ during 10 years in Austin and Dallas. After 15 years in L.A., lots of travel and 18 months here, i've never found anything comparable. So I decided to jump into do it yourself. I've been smoking about 6 weeks on a Landmann 3895 GLA and have been going at least twice a week since (yes, I'm fully addicted). I've been lucky with everything I've done so far - brisket, pork butt, baby backs, salmon, lamb & even did a pastrami last week. But I know it can get better and even more enjoyable when I can get better control of my smoker and start to deviate from others' recipes. I'm a bit obsessive with research and such so I'll probably be around lot. Like the show's name - Man, Fire, Food.

Welcome, welcome welcome............

Howdee Burn, let me tell ya about this place. Everyone enjoys both your triumphs and your educations. Smoke is the only addiction I know that even your mistakes are happily eaten. Research you say, well the search engine here is cram packed with all kinds of useful information. Be sure and try to be as specific as possible, its that full. The Guru's (Them's the ones with the Order of Blue Smoke stickers), you'll meet are not only helpful but dang nice company to keep besides that and the regular folks are just as eager to help. Everybody loves to watch your achievements so be ready to take pictures or live thru the harassment.

My one suggestion as a regular folk, I received from a wise Guru when I came in here, Take notes. Research does no good if you don't remember what you did last time. How can you search the engine or start up a discussion with a Guru about the why you were not happy last time. What if you do finally hit that exactly perfect smoke you've been working for and in your glee forget forget what you did different?

In the search engine is a whole page of recommended smoke data sheets, or use your own. They can give you some ideas. Notebook, journal, cardex, recipe book, flash drive, whatever you feel most comfortable with. When you get to that perfect smoke you'll appreciate the research. Call it your snipers kill book of smokes.

Nice to meet ya and look forward to learning what you bring with you. Most important enjoy the smoke, and welcome to my addiction.

I take it that you aren't a BAMA fan?

Just yanking his chain since he had "go horns" in his title.  I assume that was a reference to UT?

Yep, I bleed burnt orange. Although the 1st college football game I was at live was the 1975 Sugar Bowl between Alabama and Penn State with future Jets quarterback Richard Todd behind center for Bama.
