New smoker here. After two failed attempts smoking a butt on an ECB (I couldn't get the temp hot enough and had to resort to finishing in the oven), I decided to get a WSM 22". It arrived the other day and I only had a couple hours this morning so I decided to try some Bacon Wrapped Fatty's for an appetizer - one with Jalapeno, one without. I know these are pretty simple, but I couldn't believe how easy the WSM is to operate. I was able to keep the temp right at 225 and they turned out great. Next up are some ribs this weekend. Just thought I'd share my success.
