Hi Guys,

The forums look great and everyone here sees to know what they're talking about!!

I unfortunately discovered them slightly too late, and ordered the Landmann horziontal smoker (the Tennessee smoker) which seems have gotten a bad rep, for more than one reason (which i guess isn't unsurprising given its £100 price tag)

Ho hum - I am on a budget and I liked the cut of its jib, and so it was delivered today (although I haven't had the chance to get it out being at work). I'm mega stoked about smokin some M-E-A-T and have read about the problems with the Landmann (build quality, heat issues, fuel issues etc) but as I'm a newb, I'll keep hold of it for a while and when I become even slightly proficient at smoking meat, I'll get something better.

So I have a couple of questions for the well seasoned smokers out there:

Should I make modifications to my smoker?

If yes, which would you recommend? (please use layman terms as I am an utter newb).

I've read about mods for distributing heat, distributing smoke, sealing air leaks and I'm a little on the lost side.

also - which accessories are a "must have" for smoking?

I have a probe thermometer (I was given a digital one for Christmas a couple of years back)

I was considering a starter chimney although there seems to be some difference of opinion (or at least practice) on those.

I have many threads to read through still, so I apologize in advance if these questions have been covered countless times!
 
Hello and welcome to the fun.  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  The trial and error method works well.  We will try to help you keep the errors to a minimum.  Have fun.  Good luck.  Keep Smokin!
