I love gogo inflight.  Actually I live in Chester County PA.  Home of horse and Buggy, Brandywine battle field, and the Paoli Massacre.  I have been cooking extensively for the last 45 years (since the age of 7) My two passions are Pizza  and charcuterie.  Every Thursday night I have been making Pizza, and now after 25 years and the help of the afore mentioned forum I think I have mastered the art of pizza making.  About a week ago I found this Forum, I am now going to turn my attention to smoked meats. While I have been making fresh sausage since I was just a tyke with my dad, I never really ventured into smoked sausages.  I have, however, been smoking pork butts. ever since my first trip to Duck, NC and the Duck Deli about 20 years ago.  I have now taken the plunge I have 2 5lb pork bellies brining in a maple sugar cure from Charcuterie by Brian Polcyn, Michael RuhlmanA good friend of mine took Brian's class at the forest grill in Birmingham Mi and got me both of their books. I was hooked!  So I went searching for additional information and a community of like people aka this forum to help me on my journey to meat nirvana.

On the antidotal side of things. Someone at work approached me and said " I understand you have a smoker and that you smoke stuff"  I said yes, yes I do, they asked what do you smoke I said Mostly Pork butt sometimes Rib's.  They said they just purchased a smoker and they were going to give it a go. I asked what they were going to smoke, Pork?  They looked at me sternly and said Oh no we are vegan's!  without thinking too far ahead and letting my mouth run with out any sense of control I replied, then what the hell did you buy a smoker for.  They looked at me crossly and walked away. have not talked to them since.  While I did not mean to offend, it was just an un metered reaction...  Oh well my overwhelming addiction to pork fat overcame my sense of making a new friend. 

So in the end I hope you all can help guide me on my path to smoke and true enlightenment!

Welcome to the forums!  Glad you've joined us.  You've found a great place to learn and share ideas on our favorite pastimes...grilling, smoking, and curing great food!  There are lots of friendly and knowledgeable folks here who really enjoy helping one another.  Good luck with that build project, and just ask any time you need help and you'll get plenty!

P.S. Don't invite the vegan to join...they wouldn't like it here!!
