Hi All from the Allegheny forest... have smoked on and off most of my life... (53yrs) mostly game, everything from coon to venison... not a fan of smoking store bought meat. Just feel better when I can catch, clean and butcher myself.
My favorites to smoke are carp, trout, northerns and whole birds, esp. turkey.
I do a mean pork butt for when we have folks over as the wife doesn't like serving game to company.
I use a modified ProSeries grill for my hotsmoke, and have used a number of small consumer units to coldsmoke(little cheif, ect.) Recently I fried the element on my last one so I thought I would look online for plans for a homemade charcoal or wood smoker as i would like to move off the "grid". That is how I found the site. Looks to be a fair number of folks who actually know what they are doing.(not alot of that on the internet).
don't hesitate to contact me if you have plans, pictures, or whatever you'd like to share.
never too old or too proud to learn. I like folks who see things a different way.
thanks for reading this
