Newbie from Central NY

I've was looking through the site the last week as I was looking for reviews for the Brinkman Trailmaster Limited Edition and got all the info I needed to pull the tirgger, so thanks everybody.  I was blown away with all the mods and ideas everybody had, which made tranistioning from my 24" Camp Chief smoke vault propane smoker to the new offset horizontal smoker a much easier process than I though. 

 

I've been smoking pretty hard core for about 3 years now as I was hooked from my first pork shoulder!   I started out with the standard Brinkman vertical charcoal smoker, but soon realized I wanted something bigger and better.  I picked the propane smoker to start out with as I live in central NY and wanted something that could keep up with the mountain of snow we get here in the winter.  I figured this would also allow me to learn the cuts of meat, play around with rubs, marinades/brines, temps, and times for each type of meat.  I actually love doing this so much I would love to try my hand at competing some day and so it was time to upgrade to a charcoal/stick burner as my propane smoker wouldn't give me that option. So now it is time to learn how to do this the more old school way and figure out all the tricks to this type of smoking.

 

I did my first pork butt this weekend and was very much impressed how much better it came out than with my propane smoker.  I think it was able to get much more smoke overall and loved just throwing in whole logs instead of chunks.  One thing I've found in smoking is you can never get enough advice and that every cook is different even if you do it the same.  I look forward to learning and helping out when I can and hope this site can help take me to that next level!

Hi Jimmy, great to see another SMF member from central NY!! (I'm in Ithaca) I've learned so much from the forum, and have tried so many new recipes that I would never have thought possible on my smoker. 

 

One tradition I've started is breaking out the smoker during the"January thaw". BBQ tastes soooo good in the winter, when we've been deprived for so long.
