Just wanted to say hello and thanks for all the information I am able to look through on this forum.
I am very new to this artform...I have only watched/helped a few of my friends on their smokers up to this point. I am excited to learn more though and start to produce some great food on my own. I work as a fireman for a living so I am hoping I can feed my crew some good meals from the smoker too. I live in northwestern Pennsylvania, near Lake Erie.
I recently spent the day at a buddys house and he introduced me to pellet smoking. He has a nice Traeger and he made a fantastic meal for my wife and me. Watching him and seeing his smoker made me think I could probably figure this out and I knew I loved the food so I started researching smokers. After a lot of reading and after talking to a few people I decided I would opt for a Yoder pellet smoker. I have nothing against any other brands but the Yoder is made here in the USA and it seems like the guys (and gal) that work there are great to deal with. One thing that I learned from reading the forums was people seemed to "regret" starting with a cheaper unit and eventually they bought a better unit anyway. It seemed like the best thing was to jump in with both feet and get a little higher end unit up front, now I just have to use it enought to justify spending so much :) I went back and forth between the 480 and the 640 for a bit and finally settled on the 640 since it was not a huge price difference. I did add the second shelf, grill grates, griddle and probe port as well. According to Yoder I should get my smoker in mid June. So now I am just trying to read a bunch and get ready to start using it when it gets here.
Thats all I have for now. It seems like most, if not all, of my questions have been answered using the search function here.
