hi all, my name is Adam and i just joined the site.  My neighbors gave my fiance and I a Cajun Injector Electric Smoker for a wedding present so im going to get started smoking finally!  I already make a lot of jerky using two dehydrators and have gotten pretty good at that.  And last year my buddy and I started making cold smoke hanging deer sausage, but we just smoked it in a little old shed of mine, and it turned out awesome.  But I have never "hot" smoked anything and im really excited to get started.  The main thing i want to make are deer snack sticks, but we raise our own cows so im pretty excited to try some brisket too.  And pork butts, and chicken and wild turkey, and everything else really.  I just love to cook and make stuff on my own like this.  Any advice let me know.

This site seems really awesome and looks like it has a lot of wonderful people full of great advice.  Oh yeah, i already bought my AMNPS thanks to the posts on here!
