So decided to make a run of PP


I am getting a late start(noon) and this is for dinner. So I cut off an end so it can be done around 6.


Some may wonder why the late start? Well. I had to go and pick up some more wood.


Front half is pecan. Back half is cherry. And here is how it burns.
 
Should be fine. It is a 10.5 lb shoulder. And I probably took off a 2ish lb chunk. 1.5 hrs in the chunk is at 133F. Now to figure out the sides.
