I'm a Texan born and raised, and have been a fan of barbeque and grilling from the time I was a kid - I loved sitting out back with Dad cooking burgers, shish-ke-babs, ribs... and of course Texas is huge in terms of brisket. I've been to many a legendary pit around the state, and our favorite restaurant in college was the BBQ place where you could order meat by the pound.

I've always been a griller - I can cook almost anything on a grill, through trial, error, and experience. That started when after spending all the time and energy getting the charcoal hot I wanted to be sure to get my money's worth, so would go through the fridge and pantry looking for what else I could throw on the Weber!

I've wanted to try slow cooking and smoking for quite some time, but am a little nervous as there's so much GREAT quality around this area, I don't know if I'll ever measure up. A few years back I obtained an Old Smokey electric smoker, and while I could cook a pretty moist chicken or turkey in it, it just didn't do what I wanted in terms of actual smoking.

I've been doing some research, and while purists would probably scoff, I decided on a Masterbuilt propane smoker. I've got three boys age 10 and under, and don't have a ton of time to spend tending the fire box, and it seems like propane gives you better heat control without a lot of tending... and is more affordable than something like a pellet smoker.

Outside of food - we love camping, hiking, technology, and woodworking.

I lived in Texas for 10 years and yes Texas and BBQ seem to be synonymous.  Anyway I started off reading here and buying a vertical gas smoker, still use it today however I have a few smokers now. It started off as something I was going to do couple weekends a year…. Well the more I hung around here the better my food got. The better my food got the more I got addicted to cooking. I find myself now taking off work early to get the smoker fired up or sitting out in 30 degree weather smoking a chicken. Don’t say I didn’t warn ya

Thanks for the tips! I've signed up for the e-course. I cured my smoker last night - hopefully will give it a trial run this weekend.

Welcome aboard, seanp!  Glad you joined us.  You've found a great place to learn and share ideas.  Lots of friendly and knowledgeable folks here who really enjoy helping one another.  There is nothing wrong with those Masterbuilt rigs, lots of people here use them.  I have an electric MB myself.  Good luck with it and  just ask when you need help and you'll get plenty.

Hello,

Glad to see another Texan close by. Enjoy your new smoker and have fun. Get your boys involved. I have been reading this site for months and decided to also join the forum recently. We live up in New Braunfels and wanted to know if there are any smoke cooking competition and events in this area.

Have a great day!

Welcome seanp. Glad you are here with us.....Texas is a great state. I spent lots of time years ago traveling Texas selling to hardware stores. Plenty of nice people in Texas. One of my favorite states.......
