After almost a three week hiatus I smoked a 16lb deboned butt. After a couple of debates about twining it up to look like a butt or splaying it out in all it's porky goodness, I have decided that we like it splayed out like a fat girl on a porch swing. I've been told (warned) about it drying out, smoking unevenly (it does a bit, but I adjust as needed) - but I'm here to tell ya, you can't beat the overall smoke throughout the meat and lots of good bark. And here are the qviews to support my decision!!
