Smoked Pork Butt

Hi all,

I'm brand new here, and new to smoking (been grilling since I was a cub scout though)  and I am going to try my first Pork Butt (for Pulled Pork) on Easter.  My question is this:

In Jeff's section on Pork Butt Smoking, he says to put the rub on and leave it set in over night, and then in the link to "Smoking Basics for beginners" he mentions slathering the butt with mustard, then applying the rub before putting it on the rack.

So my question is am I doing two seperate applications of rub?  Once to marinate over night, then another rub with mustard right before smoking?  Or should I just do one application of Rub the night before, then go right to the smoker in the morning?

Any help and ideas would be great.  Thanks all.

Remember the mustard is there to make the rub adhere better, it really adds nothing to the flavor. Do it the night before if you can. Gives it more time to work the meat. I then add alittle more rub (no more mustard) before putting it on the grate.
 
Flash X 2...I do the same...A lot of guys don't use Mustard but adding Rub Twice, definitely...JJ
 
Hi Dan,

I no longer use mustard but I do apply rub the night before and let the butt sit in the fridge overnight then apply more rub before putting the meat in the smoker.

Sometime i use mustard sometimes i use oil either way something has to be put on them for the rub to stick to.then i wrap with plastic put in fridge overnight and apply more rub before going on the smoker. its all about what you like. and what works for you

I have never used oil or mustard..the rub seems to stick on just fine for me!!

You can just run it under a water tap for a few seconds and lightly pat dry. Apply rub.

Must be the air up here in the panhandle...

I take them out of the vac pak and cut off as much fat as I can and then just add the rub/SPOG and plastic wrap them for the fridge resting period..

 There is usually quite a bit of moisture in those vacuumpacks from Sams and Costco anyway. I tend to wash it off a bit, you leave it.
