Local Cow Missing Brisket

I bought a side of beef from a local butcher. Everything was great except for one little (ok large to me) detail, my brisket accidently was turned to burger.  I thought about it for several hours, and finally gave him a call.  Apparently when my order was taken they forgot to write it down (honest mistake).  He said no problem I will get you one.  Two days later he calls me up and says he has my brisket.  I said "Great! How much do I owe you?"  He said several times I didnt owe him anything, but I felt obligated because I know he doesnt get it for free.  After several back and forths he agreed to accept what I thought it was worth.  I gave him $20 dollars. 

Now that you know the back story..... Did I pay him to little?  I want a good relationship with this guy and don't want him to feel cheated.  On the same note, I bought a half a cow and expect to pay well under market price.  Any thoughts would be appreciated.
 
They screwed up your order when you specifically asked for brisket, it's their responsibility to make it right!
In my opinion, you don't owe them anything for the conciliatory brisket!!!!

Agreed...any good business person would happily give you the brisket and apologies...as a small business owner, I'd bend over backwards to make sure your order was as requested...at almost any cost.

It's always struck me as funny how businesses will spend (thousands or) millions to attract new customers only to have bad policies/management that do NOTHING to maintain them? I could go on....

While I am sure he appreciates the $20, he knows they made a mistake. I would not have offered, however, I would remember him and do business there in the future. I would make sure he knows I will do additional business with him...

Thanks for the input guys.  Throwing the brisket in the smoker in a few hours.... Can't wait.
