looks like you are using regular cheese not Hi-Temp!! Do you ever have any problem with the cheese melting?

just start at the low temp of 130 thru 170. Use good cheddar.

My thoughts exactly. You got me hooked after my recent success with jerky. I want Summer sausage and snack sticks now!

Hey Rick,

Alesia hooked me up with some jerky advice she got from you. The one about using a brown paper bag to stabilize the moisture in the meat. It worked great! Thanks.

Now back to the jalapeno sticks. Does the powder add extra heat as well as flavor? I like that bottle lurking in the back of one of the cheese pics too.

Anyway

Got a few questions asked on the cubers. The 1/4" i got on QVC bout 5 years ago. The 1/8" i got at Kitchen collection outlet store for like $9. Both are made by Genius and if you google you will find.

Both operate the same, put item on plat and push down.

Here are the 2 of them.

Both canisters slide and have locking tabs.


Both have fixed SS blades.



The plate on the 1/4" comes off for cleaning. Just pull the 2 black locks towards the middle.



Here is the plate off.


On the 1/8" the plate is fixed fast like the blades. There is a lifter that sits down over the plate.



Both are dishwasher safe but dont use the heat/dry cycle.

Hey thanx rick,

the reason I was asking about using reg cheese instead of hi-temp was, I just made 2 batches

summer sausage recently, using hi-temp I had ordered. Very expensive.... $9.99 + shipping!!

Got 1500mg of ammoxicillin in me with another 28 days worth so hopefully i can have my tooth fixed by the Gathering, If you were there last year you would know i was with a tooth ache there, Jeebus.

Got he sticks mixed and ready for stuffing.

Cure and mix in.


Cheese


All stuffed


PID running at 130 for 1 hour.


Done with 130, now 140 thru 170 with smoke.


Thats all the air i need for the AMZNPS to smoke in my Bradley

 
I have some needle nose pliers here at the shop.  I can take care of that tooth for you!  Just sayin!
