Foiling: Pan or Wrapped?

Question. When you guys foil during stage two of your ribs, are you wrapping the ribs in foil with the other goodies (juice, etc.) or are you putting into aluminum pans (with juice, etc.) and foiling the top? I am wondering, because it seems much easier to put the ribs in a foil pan with some juice and cover with foil vs. wrapping each individually. I have done both, and wrapping in foil seems to make for a more tender product but I wanted to get some other opinions. Thanks!

I have always just done individual packets myself.

I have always used the individual foiling wraps - double wrapped but I have seen others that use the pans successfully.

With brisket or butts if I were to foil I would do so with a pan.

When I foil, which is becoming less frequent, I do ribs individually and butt/shoulder in a pan

Usually I just wrap the racks individually with some "goodies".

Ribs I wrap by them selves....the butts and brisket....I use a pan.  Easier for me to move them around and keeping the juicy goodies for a sauce.

when i do wrap my ribs i wrap one rack add what ever , that way i can "flavor" each one with what ever , i like some spicy but my wife really don't like them as hot as me.

I wrap ribs separately.  I don't know if it really makes them more tender than foiling them in a pan, but it makes them easier to handle.  And if I'm smoking multiple racks, I like to change up the seasonings I put in each foil wrap for a little variety of flavor profiles.

I always wrap racks of rib individually, but might try the pan next time b/c I never thought of that.

I have always foiled racks individually.  I have heard people say that it helps the racks to cook more evenly that way although I have never put that to the test.

Also, when you have several racks it is like unwrapping presents when it is time to take them out of the foil!
