New to the forum and I love to cook.
It's been years since I've used a smoker, but we picked up the Smoke Hollow combo unit last weekend. The forum has already been so helpful with reviews and tips for maximizing the performance of this particular smoker. I look forward to reading and learning from some of the pros here.

Ok, action so far... Added the gasket to the smoke chamber and fire box. Used some JB weld to seal up the smoke chamber and coated it inside and out with canola oil. Then I pulled all the cast iron grates and coated them heavily with some home rendered tallow (this is stupid easy if you've never made it).

We fired the gas grill first. Took it to 400 for an hour or so. Wiped down all surfaces and refreshed the grills with some canola when done. Then wiped down the outside again.

Next we added some charcoal to the fire box and brought the smoker up to 450 for an hour. Part way through, we added some apple chips to add a little flavor to the cure and to see how the smoke would roll. Was a beauty!

We are just bought a quarter beef and have a whole pork on order. Hoping to have a great smoke/grill season!
