Looking for recipes!

At many good mexican restaurants, they usually have two bottles of sauce for your tacos and whatnot.  One is usually green, and the other is red.  On a weekend trip to Houston the other day, I went to a nice Mexican restaurant for breakfast (they opened at 9) and had the most amazing green sauce that absolutely SUNG with my eggs/brisket taco.

What I am looking for is not necessarily hot sauce, but a complimentary sauce.

Not this:

I want to have a smoked taco night for my friends and want to have the sauces available.  Anyone have good recipes?

Okay, found a good one for the green sauce, and tried it tonight with some shrimp tacos.

3/4 pound tomatillos

1 avacado

1-2 serrano chiles (I used 1 because wife is timid)

1/4 chopped cilantro

Juice of 1/3 lime

heavy pinch of salt

3 cloves garlic

(1) Remove husks from tomatillos

(2) Boil tomatillos for 5 minutes

(3) Put everything in a blender, give it a whirl!

Mine looked like this:

Tasted great!  It has the perfect consistency that I was looking for as well!  Now off to find a red sauce....

see if you can find some Tapatio red sauce at the local mexican store. over there and here in the southwest most every kitchen table has a bottle on it.

I've seen Tapatio around here.  From what I can remember, it looked more like hot sauce, but I've never seen an open bottle.  Is it thin and runny like hot sauce, or is it thicker?
