Hello all, Austin Texas here...

been smoking since I went off to college in 1981, now I do it so much my nickname is Brisket.
Pretty much have brisket down to science! Looking for input on how to cure/cook up ham, jerky, and steaks. Haven't tried ham or steak yet. Made several batches of jerky with various levels of success.

Use the search bar at the top and you will find lot's of info about ham and jerky and search "reverse sear" and you will find some Awesome stuff on steaks!
