Started the UDS at 4 this am, brisket (two at 7.5 lbs ea) on at 4:45.  Looking good- have the wind screen in place, not so much for wind but temp is 35 with fog moving in so just for general protection.  Ball valve full open and WD 40 cap w/ hole on one vent, other one is capped.  Holding at 250 +/- 5 degrees so doing good so far.  Anyone else out and about? Shoppings done so it's smokin time!

Awesome, show some pics..... are you using the minion method with the UDS?

I found out the hard way that its best to use briquettes vs. lump for this method, I had the fire go out with lump in middle of the night, but luckly the uds held temp and the butts where still at 165*,

so there was rebound time to fire it up again.

Smoke ring on those briskets, r going to be amazing. Have fun, enjoy !!
 
Surprising fast cook - 6 hours and done.  Test taste awsume (as the kids say) then to the frige.  Santa brought the fastest thermapen - orange!  Kids come at 4:00 so the real critics will be here soon.

As to method, I used Kingsford, most of a bag in  basket then 15 briquets lit via the stove pipe and dumped on top center of basket.  Had no trouble holding 240-250 degrees w/ ouside temp in low 30's w/ moderate wind.  Had a wind screen with one half cover so lots of protection.
