Hi All-

I have had great success in the past smoking a standing rib roast (8.5#), but with my wife's family joining us for Christmas Eve, I am going to try tackling two 9# roasts (18# total) in my water smoker. Question being, do I need to adjust cooking time (or anything else for that matter) based on the fact that I will have two separate roasts in there? Would hate to end up having to ordering pizza instead

No just like if you were doing multiple butts for PP.....

I would give myself maybe and extra 45 min padding....just to make sure..

Plenty of Aus Jus and happy bellies I see in your future...
 
Yeah, it may take an extra 5 or 10 more minutes to get your smoker cooking temp to stabilize with the extra meat in there, but it shouldn't affect the cooking time long term. Just do whatever you can to track the internal meat temp of both roast. In most cases, one will always cook a bit faster than the other, so be prepared to foil and rest it in a cooler while the other finishes.
