Wild turkey breast - first smoke

Hi,
Tomorrow I am gonna try my first smoke. I have a good size wild turkey breast half.
Couple of questions:
About how long am I looking to cook?
Should I brine before?
Any suggestions on rub recipes?

First of all , could you wander over to our Rollcall section and get a rousing Howdy from everyone, and add your location to the Profile (kinda helps with some to know your climate issues).

Now, I feel a Brining would be an asset in your 'Wild' Bird Breast, also a layer of nice Bacon would be good... everything is better with Bacon on it, and Butter

Look through the recipes , use the "Search " at the top of the page. You could go simple with S/P with some Onion and/or Garlic . You could also try one of the 'off the shelf ' brands at your local Grocer.Do look through the Recipes , some very good ones , also some on the forum seel Rubs and such...

There will be more Game cooks later, but for now , have fun and...
 
Thanks for the reply. I just posted my intro in the roll call.

I am trying to plan the day a little tomorrow. About how long should I expect it to cook. I know it's based on temperature at the end but roughly any guesses?

Myself. I'm thinking an overnight brine for ANY poultry (pork as well)... especially wild game, as they are VERY lean... Breast will dry out on ya very quickly without brining... I'll guess 3-4 hrs at 225`
 
Alright. Here is what was on the menu for my first smoked dinner ever. Kind of weird but wanted to experiment a little.
Wild turkey breast
Salmon steak
Corn on the cob
Mixed veggies with zucchini,squash,carrots,onion,and asparagus and red potatoes.

I brined the turkey over night.
Used an applewood rub from the store. Injected with butter creole sauce.

Smoked everything with applewood. Staggered the start times starting with turkey then veggies and corn, then salmon.

Lessons learned:
Get charcoal warmer from start
Get better thermometer
Probably cook everything at the same time and a bit longer.

Turkey was very tasty and juicy. Only complaint was outer skin ended up really tough. Tasty but tough.
Salmon was the best thing.
Little lemon pepper and Italian dressing.
Wouldn't make any changes except maybe cook a little longer

Veggies and corn were tasy but needed to be cooked longer.

Over all not a bad meal for my first ever smoke.
