I was just trying to figure the capacity of my fibrous casings based on the density of the meats and the volume of the casing. I figured with a 2.4" casing x 12" long (figuring 9" is useable) gives me about 40.6 cubic inches inside the casing. That gives me about 2.8 cups. Since most meat is around a pound to a pint It's going to be a little less than a pound and a half per casing. I was figuring a pound to each so I'll just have to get more meat. I'd have to shorten them to around 6-1/2" to make them 29 cubic inches and 2 cups.

Martin, evening.... Is a "Hank" approximately 100 yards/300 feet ??  And is that stretched out or stuffed length ?? or something close ??

Thanks Martin! That was really helpful to me as I am trying to get set up to start making my own sausages & wasn't sure about the myriad casing choices. You made my task easier
