Had a 12 pound boneless pork shoulder in the freezer from Costco, and it was calling my name on Saturday night.  Sorry I don't have any pictures before it went in but I did Rub it down with some Butt Rub, and some extra garlic powder, black pepper and a little cayenne.

Threw the two pieces in at 9:00 PM, Saturday night, and threw the Mavericks around 11:00 PM.  Went to Bed and at 9:15 AM Sunday they had reached 185, so I Foiled and put in the cooler for 3 or 4 hours and then pulled them.  They came out pretty good.  The bigger one had more fat and stayed alittle more moist, the smaller one wasn't bad it just wasn't as good at the larger one.

I smoked these with a mix of Apple and Hickory on the Yoder 640, no Amazin Pellet smoker this time.  A little blurry Sorry about that




 
This was the first time I didn't foil for the stall, and there was a noticeable improvement in the bark.  The outside stayed nice and firm, which was nice because where parts of the fat cap were I was able to slide huge chunks of bark off and add to my meal.

I have been thinking about the Yoder 640.  How is the pellet useage with this model and how may  Lbs did it take to smoke the butts overnight?

It goes through some pellets, but I don't really have anything to compare it to.  I like having the extra room and knew pellet consumption was going to be higher because of that. I would guess between 17-20lbs.  Maybe next time I will clean it out and see how much it uses.
 
What I do is put smoke to it from about 8 PM til midnight, tin pan and foil, set the temp on the smoker to 200, then head to bed. When I get up I will pull it from the pan and dry it out in the smoker for about an hour then pull it. Perfect and falling apart everytime.
