We are having a meal at work tomorrow. Each person in our group decided what kind of ribs they wanted and how much and chipped in for the cost. A coworker went to Sam's Club and picked up 15 total racks (spare/baby backs) of ribs. Each pack of 3 racks of ribs was distributed to one of 5 cooks. I got to cook some baby backs.

Here's some q-view:

Wish I hadn't cooked these so long in second stage. They are almost too tender (fall off the bone). I can't wait to try some. Off to bed. Up early to heat in oven and wrap in towels and put in cooler.

Don't mean to sound dumb but what do you mean by grilled for 10?

You put them on a BBQ for 10 mins?

That is exactly what I did. The bones were already falling out. I was afraid to smoke them another hour. So I put them on the gas grill and mopped some BBQ sauce on 'em.

At what point did you foil them?

I have a MES 30 as well and I am going to try this tommorrow

Had my MES30 set to 250. Put the rubbed ribs meat up to smoke for 2 hours. Then took them out and put them in foil. Put the foiled ribs meat down in smoker (didn't add any smoke during this phase). They were done when I took them out of the foil, but I wanted to char them up a bit and mop them with some BBQ sauce, so I put them on the grill. This method is called 2-2-1 (2 hours in smoke-2hours foiled-1 hour in smoke and mop sauce (if desired).

If I did this again, if probably do 2.5-1.5-1.

For spares you want to start off 3-2-1 as they are bigger.


I might also lower the temp to 230 next time.
