So this weekend will be 2 tri's with some smoked mac and cheese and smoked wicked beans.  I ran to the wood supplier and grabbed cherry and peach (My normal mo is apple but got to try it) So I am going to do half and half with the wood.  This is my tri's with half rubbed down about to get dusted on the top side.  More to come.  Happy smoking!!!!!!!

And the money shot.  I did one tray of mac in the smoker and one in the oven. Beans were the bomb but I have to say the smoked mac did not turn out the way I had hoped.  If was way over smoked.  I think I should have come off alot earlier.  But I had a back up plan so all worked out.  Thanks for looking.

Looks fantastic I'm in Vegas where do you get your wood from?  I would like to try their wood .  Nothing like a good tri tip.

Thanks sounds great!!! Hubbys is over in that area all the time will go check them out!  What wood  is your favorite?  Just checked out their site great web page now an absolute must.

Apple is great for all around (2cf of chunks for 45 bucks) I am trying cherry and peach right now so I have one smoke under my belt so to soon to tell.  The owner is a great guy to work with and he supplies all the casinos.
