So I thought I would try a pork sirloin roast and while I was at it make up a fatty with sweet sausage provolone cheese and mushrooms. This is my first attempt at a bacon weave was alittle short on the bacon. The rub on the prok is just something I threw together to try.  Here is some Qview right before entering the smoker.

Man it is nice to be back here again, family health issues have kept me away from smoking for awhile.

Let me know what you think.

Looks like a good start. I can relate to the not smoking for awhile. I haven't smoked any thing in awhile my self do to my job, and I'm going threw withdrawals.........LOL Welcome back to the world of smoky goodness.

Here they are after resting for about an hour. My only gripe is I tried sweet Italian sausage for my fatty, I think a breakfast sausage would have been better. The pork sirloin turned out fantastic. also I did not get the fatty wrapped quite tight enough,by the way it was stuffed with provolone cheese and mushrooms.

Any suggestions would be greatly appreciated.

Thanks for looking
