After reading so many good things about Pernil, I decided to give it a go. I started with a 7 lb. picnic and removed the skin. I know, the skin should be left on but this my experiment, ok. Poked a bunch of slits in it and stuffed them with garlic cloves. Then threw together a wet rub of a package of taco seasoning, hot sauce and olive oil. Slathered that on and then SPOG. Wrapped and put away in the fridge overnight.

Ready for the Mini.
