We were getting ready to sit next to a fire and have a few adult beverages and she says " you should smoke a pork butt". She didn't have to tell me twice. Lol. Just got back from wegmans with a nice looking 8.5 lb. butt. Guess I'll have to stay up and keep an eye on it ( actually on my ET732) lol. Post some pics in a bit.

Isn't it great when the boss tells you to do something you wanted to do anyway but didn't want to ask about?  Good luck with your smoke.  If it turns out good maybe she will ask you to smoke more things!  Steve

Thats great David, you are a lucky man.  My wife doesn't really like a lot of it, brisket is ok, but she has a problem with pork.  She says it isn't grey, so it dosen't look done.  It's ok though, it leaves more for me to eat!  Steve

It's nice doing an overnighter knowing you have your hi and lo alarms set. Looks like I hit the wall at 162* this morning.

Doing good. Up to 163* lol. In the past I have always foiled, think I'm gonna go no foil today. Smoking some japs for my homemade BBQ sauce also making soflaquers finishing sauce.

My wife loves BBQ. She is usually very open to anything for dinner, but if I ever hit at BBQ she lights up. We have an agreement for Black Friday shopping. She gets to shop and I "have" to make what ever she wants for late lunch. Usually I am going ribs, greens, mashed potatoes and anything else she asks for. She is happy and I am rewarded twice for my efforts..........

Bark was great, finishing sauce was great, BBQ sauce was great. Well worth the 18 hours it took. I added some new pics to the original post.
