Hello all,

  I have been smoking for about 8 months now and do good job, but I have a hard time with keeping my temp where I want it. I could use some of your help with it. I have tried making a big bed of charcoal and then putting a chimney of coals on top and it works but seems like it drops fast. I have a Char broil offset smoker so you know.

I am still trying to figure out how long the bed of coals should last and the best way to add more without losing too much of the temperature.

That may be part of the problem. I know a lot of people have good luck with them, but if I remember correctly, they require a lot of mods and a bit more babysitting than one of the more "set-and-forget" models. Maybe try making a raised charcoal basket so the fire can breathe from all sides. Others with experience with this smoker are sure to give better advice than I.
