Just got the unit today and smoking some ribs and Boston butts. Using my MES 40 and the maverick is reading 219 on the barbecue probe and have the MES set at 275 is this normal?

If you verified the MAV probe is accurate in Ice or Boiling water. Then that is the one to trust. For one thing the MAV is VERY SLOW to respond to temp changes. Depending on where you have the probe there will be a variation but 55+* is quite a bit.  If there is a drip pan under the meat, that will cause a temp difference. Give the system some time to stabilize and see where you are at. Also move the MAV probe to different levels to see where you are at...JJ
 
Just tested the food probe and barbecue probe in ice water the food probe read 40 degrees the other probe read 228 went up to 230 then down to 226 that's it.
