Hey everyone, my name is Mike and I hail from the Austin, TX area. I have been a novice smoker on and off for a few years now. My dream is to own a green egg, but that is way out of my budget. Previously I have used the weber kettle grills with great success. After my last kettle burned out my wife convinced me to go gas...something that is against all of the BBQ laws in Texas. But, I obliged and have been hating it ever since. Today I will be buying a Brinkmann upright smoker (split door). I like the way it looks and will mod it right away with a new fire pit and some sealant around the doors. As you all know, Texas is beef country and brisket is king. My goal is to become a master of the brisket, with a minor in pork (mainly ribs and butts). So..again, hi from Texas, I'm looking forward to learning some invaluable information here!
