Hello everyone,

I am new to the forum and have poured over the different threads for the last week or so :)

My questions is how long should I expect the Master Forge smoker to take to heat up?  I am running 4 racks a ribs at the moment and it seemed like it took the smoker a good 30-45 mins to reach around 230 degrees.

I am using a full water pan and each rack on the grill has a slab of rib cut in 2.  I did leave the ribs for about 30-40 mins on the counter to try to bring them to room temp but they did come from a cold refrigerator.  I am thinking the cool ribs and the quantity maybe caused the temp of the smoker to rise slowly.  Is this normal for these smokers?

I put my ribs in when the smoker hit 220, but it went down to 180 or so, that is when it took 30-45 mins to heat up again.

Also, should this time be part of the overall cooking time when considering the 3-2-1 method?  I guess I will have to test them and just see if they are done at some point.

I did some ribs last week, without using a digital thermometer to better guage the inside temp and I messed up my ribs somewhat.  The temp was actually too low from what the stock thermometer was reading and I ended up with some dried out ribs in spots slightly chewy in others.

I added the digital thermometer today and will see how it goes.

Last question, will installing a gasket around the door help with heat retention and higher overall temps?  I am seeing about a max of 240-245 temperature on a nice July day.

Sounds pretty normal to me. When you open the door you lose a lot of heat and can figure on 10 minutes to recover. You put 4 racks of ribs in, that's a pretty big mass with a much lower temp than the smoker so you can figure that's going to lower the temp too and take awhile to recover. I have a GOSM propane and whenever I put large amounts of meat in it the temp drops and takes awhile to stabilize, I have read on here that the MF's don't run as hot.

Are you seeing much smoke leaking around the door? If so then you are losing heat too and a seal may help.

Another thing that will help your recovery temp, next time dump the water and fill your water pan with sand. Sand will hold temp much better than water and really helps to stabilize temps. You can get a disposable foil pan and put it right on top of the sand pan with some water to add a little moisture and catch drippings so they don't get in the sand.

I am seeing some smoke escape from the door, but not a lot in my opinion.  I'll add a gasket soon, I'm guessing once I put it on it should be easier to maintain a steady temp since I won't have that heat loss to compensate for.
