Been a while since I have been on here so i thought I would post the menu upcoming for 4th party (smoker-wise anyway).  Last year I did 30# of pork ribs as well as a mess of ABT's.  While the ribs turned out great and everyone left full, I am going for a little less labor this year lol.  20-25# of pulled pork, another big ol' mess of ABT's, 2 pizza fatties, a bacon cheeseburger fattie, a mushroom swiss fattie, and if there is any leftover bacon we will wrap hotdogs in bacon and throw them on too (the kids really liked them and it is a good use for the extra bacon).  I will try (good intentions anyway) to get some qview and post as things move along.  I also want to say thanks to all of you who have posted things.  This place was a godsend when i started out and continues to be a great place to read up on new stuff, see different takes on classic foods, and continue in the lifelong education that comes with smoking meat.
 
Sounds like a plan, i love some fatties

2. There is no such thing as "Extra" bacon. There is only Bacon. And perhaps More Bacon.

By the way, 30lbs of ribs compared to pulling all that pork and rolling all those ABT''s and fatties sounds like you've created more work for yourself this year. :) Sounds like a great menu, have a blast!!
 
Well, as usual, the best intentions never see fruition.  I have no pics to share, got a bit busy with fire department calls and just plain forgot to take them.  However, everything did turn out very well.  All 4 fatties were gone, all the ABT's, and 2/3 of the pulled pork.  And to top it off, I "found" some bacon hiding in the freezer, so we cut up some chicken breasts, rubbed them with an applewood rub, wrapped them in the bacon and smoked them up as well.  They really hit the spot yesterday.  Only problem I had was that I also forgot to glove up before cutting the jalapenos.  Wow, that burns for a bit....lol.
