well, i smoked my first ribs yesterday.  i just want to say thank you to everyone that's ever taken the time to write about their problems and successes here on smf.  i would call my first attempt a success!  ...hey, no one got sick!  lol

had 3 racks all together, but only 2 fit at a time, so...

...started at 3pm w/ 2 racks. was expecting 4-5hr cooking w/ foil going on at the last hour to get ITs up above 190.

decided to try the "minion method" ...i'll go w/ lump and chunks next time, these were brickets and some apple wood chips

a couple hours later...looking good.  one got a blend of paprika, garlic powder, onion powder, course pepper, cayenne, and some basil flakes.  the other got what i call "cowboy style" which was just course black pepper all over.  both got a smearing of mustard and were in the fridge for about 45mins before they went on the grill.

foiling after i.t.s got to 160ish.  both got butter smeared and both got a little apple juice in the foil to help keep em moist.  the cowboy style didn't get anything else, but the blend got some brown sugar.

after i.t.s got to 190ish, i unwrapped and put some bbq sauce on each.  tried to get the fire as hot as i could (~300) to set in the bbq sauce.

wifey was happy!  ...maybe i can now start planting the seed that i need a bigger smoker ;)

good stuff, i was so full last night.  next time i'll start them a bit earlier so we won't fall asleep with bricks of meat in our stomachs.  lol.

i'm gonna try!  money is tight, but there's always hope and change from the couch ;)
Looks fantastic! Seems the wife really enjoyed the ribs, but not the picture taking!!!!
she's a ham...  ...and she like the cowboy style more than the other.  i caught her literally red-handed munching
