I've only done two smokes...a butt and a turkey.  I was up at 2am for the butt and had to keep adding chips.  By noon I was VERY tired.  Although my first butt turned out OK (had to finish it in the oven due to in never going above 154) I really got tired of adding chips.  My turkey was OK due to it didn't take long to cook.  I can't wait to smoke another butt once I receive my ANMPS.  I'm going to get up...load it up...and go back to bed!  OH, I also got some hickory pellets.  (Hickory is my fav)

I also want to add that this forum has been so helpful!  I can't thank y'all enough for all the advice you have given me!

I'll be smoking some ribs this weekend with the chips I have (wonderful recipes on here) and then....ta da...butt next weekend with me new ANMPS. 

Just wondering... I have the masterbuilt MES 30 and I hear I need to put a tile on the right side, above the smoker tray.  What size tile do I need?

I still need to know about the tile and I read somewhere that I should open the chip add a little.  I'd like more detail on this.

Dave has you covered on those two issues. My suggestion to you is to use that search bar at the top for almost any question you have and you will find your answers right away. We are always glad to help but we are not always around.  
 
I hate to be a pain, but I just can't find what I'm looking for.  My MES 30 I bought from Amazon...no window.  I'm kind of a look and see person.  If anyone can show me a picture of my smoker with the AMNPS in it...that would be great.  As far as the tile goes...all I have seen is that it is usually talked about in the MES 40. 

Any help is greatly appreciated!

Hey FL Girl

Don't get all hung up on using the tile yet.....

The tile will help to deflect the heat, but can also direct too much heat to towards the door

Take your thermo, and measure the temps in several places on every rack.  This will tell you the hot spots inside your MES.

Also, just because you set your controller at 225° does not mean that every rack is 225°.  You'll have some areas that ate hotter, and maybe cooler.

I have to set my MES 40 Controller at 212°ish, to maintain 225 on the center racks
