hello fellow smokers,

wanted to drop in and introduce myself, i have been lurking on here viewing qviews and recipes for some time so time now. was wanting to update my profile and seems as though i need to participate a bit more in the forums.  so here we go!

a bit about me: im currently enjoying the last few hours in my twenty's and am looking for some ideas for my bday smoke tomorrow. i live in the midwest, and currently smoking on a 18' WSM. I like to use local woods for my smokes, not those chips or chunks you buy in the store, im currently using apple wood for all my meets which i enjoy every much and has a wonderful aroma and taste.  i have been using my WSM for about a year now and have had wonderful results (with the help of SMF forums, of course) cooking ribs, brisket, chicken, turkey, salmon, fatties and abt's; seems as though everything is better when smoked!

looking at preparing a bday menu for tomorrow that includes: a boston butt (first time), rack of spare ribs-cut st louis style, a spinach/mushroom fatty and probably a bit of chicken. looking at the sides - wicked baked beans with the spare meat from the ribs (hopefully i can fit this on the smoker :/), loaded bake potato salad, and the normal mac n cheese, salad, corn and all that good stuff.

i work and go to school full time so dont always get to spend enough time with my smoker so im planning on this to be my big smoke until school starts again in a few weeks. did get to break in my smoker for the season last weekend with a hog of a brisket, 18lbs before trimming, and must say everything went smoothly, so here i am preping for tomorrow!

sure look forward to all the up and coming post about everyone wonderful cooks/recipes! 

p.s. gonna have to try posting a qview here soon as well, figure tomorrows smoke would be a great time to start so we will see how it goes!

swisha, morning and welcome..... I see you have been hanging around for quite awhile....  Glad to see you post....   Take plenty of pics and be patient for the "censor" to approve your stuff.... We do our best to keep the "spammers" out of here... Sometimes it seems a pita but keeps the forum pretty clean...  Enjoy your birthday and make some great Q...  Dave

RTBBQ thanks for the heads up on the long cook time, as of  now i plan on a 14 hr cook for the butt with 2 hrs rest. but cant really say for sure until i talk to my butcher and see what he has on hand as far as boston butts go. either way lookin at 1.5 to 2hrs per pound. did a overnight cook test run last weekend so i think im up for this adventure.

dave, yea i have been hangin around for awhile now huh, ha. but what can i say there was so much info to absorb at first! i am now ready to participate!
