I have a 250 gallon horizontal propane tank that I made into a smoker. 24 x 24 smoker box with propane and wood. The temp comes up fine and will hold at 250 degrees but then goes to 300 degrees. I 'm having trouble getting the temp to come back down or to maintain it at 250 degrees.

you can do a few things to let the temp down, you can open it up and let some of the heat out, not an ideal solution, or you can poor/spray water on it and that will cool it of slower but it will cool it off. both of these solutions just remove heat from the smoker and dont fix the problem of too much heat.
If you are making too much heat, turn down your heat source, if you are using wood take some out or spray it with water/juice to slow down the burn, if on gas turn it down some, might need to add another valve after the regulator to do this if your only running one burner and its on its lowest setting(caution some times this will cause the burner to stop burning so be careful when doing this) if electric you might have to put the plate on a transformer so that it is only getting 100v or 95v or what ever vs 110-115v.
