That looks wonderful ! Did you add any logs/wood to the coals ? Sure would have loved to have been there & eat some....but looks like ya'll took care of it.


Not this time since it was a Cuban recipe going for more of a roasted taste.  The next one will be BBQ style with pecan logs thrown on for good measure.

Yes you did we love plantains we also had some Yucca Root but that is not to much of a favorite for me.

I thought I recognized the plantain and thought the other might have been a mash of yucca but was not sure. Good job on a great meal   
 
Looks great EJ. Was that the sweet plantain or the not sweet ones. The sweet ones are too sweet for me. I like mofongo pretty good too. Would you mind sharing your Mojo recipe?
They were the sweet ones my Mojo is simple it was taught to my by the Cuban family I enjoyed this meal with.  They are my kids godparents so it is an honor that I get to spend such an important holiday with them.  In a food processor place one whole onion and on whole head of garlic pealed let the processor do its thing and add 2 cups of sour orange juice and a 1/2 cup olive oil then add salt pepper and cumin to taste.  Mix all up and let sit for 24 hours before you use it.  Stir well before applying to the pig.  This also makes a great chicken marinade but you better like garlic.
