Hello from Indiana. My wife bought me a MES 30" digital for Christmas. I found this site AFTER a couple attempts at some cooked but very tough meat. The knowledge here has been a blessing. I have grilled and camp cooked for 20 years or so and have gotten decent at it. But. smoking seems to be a whole different animal.
I tried the 2-2-1 rule ( I learned that here) on some babybacks last weekend. The family agreed that they were better than anything I have cooked on the grill. I can't wait to try another pork butt after reading the tips and recipes from here. My first one I cooked to temp and pulled it out. After prying it off the bone I had to finish it in the crockpot to make it edible. I also made some very flavorful, dry salmon jerky by accident. I hope to learn how to do fish on the smoker better.
