OK, so last Christmas my brother had me over and he was smoking a prime rib and a turkey both turned out amazing he smokes on a Weber 18.5 "Smokey Mountain". i could not afford the weber so i went out and bought a Brinkmann "smoke 'n grill". Does anyone have any tips for me. i find that its really hard to control heat on this smoker because it has no vents and i had to make a custom slide to add charcoal slide to add charcoal instead of pulling out bother grates. i also had to make a custom water filler for the water bowl. PLEASE ANY ADVICE CAN HELP IM IN NEED OF IT!!!

I would recommend using the search bar and search for "ECB" or "smoke'n grill",  either one should get you right where you need to be. There are some highly recommended modifications to make this smoker easier to use. Also, If you ever can spare the $, the weber smokey mountain(known as the WSM here) is well worth the investment. It will produce great food and last a very long time like most other weber cooking appliances. Dont get frustrated(there is a learning curve..which I think I'm about in the middle of), it only gets better.
