picked up a nice angus brisket at the DEPOT today should be big enough for some slices, some shredded sandwiches and of course some burnt ends

gonna let it sit overnight and put it in saturday night for an all nighter

i'm not sure if i'll sleep tonight thinking about it

gonna make some moisturizer tomorrow to keep it moist

made it through the night pretty much on schedule  temp is looking good as of 8 this morning  maybe 10:00 it might be to 160 then i will foil  hope by two i can split it and set up some burnt ends to be ready around 3:00  

looking pretty  got the whole house smelling good    wife got up at three and went to the other room said i smell like smoke and keep waking her up to much checking the baby

heres a couple finish shots

this is the flat     i separated the point and flat at 160 trimmed off the inner layer of fat and tightly foiled both in separate pans

i think the foil pan keeps it more tender than foiling alone cause you can pour a little juice in the pan then it steams into the meat 

  cut off a nice piece for some burnt ends
