Welcome to SMF! Glad to have you with us!

Would you do us a favor & update your profile info to include your location, then head on over to roll call & introduce yourself so we can all give you a SMF welcome. I would also recommend signing up for the free e course, it will give you all the basics of smoking.

Tell us about your smoker?

Many are not designed to be "stick burners".  Those work better with natural wood charcoal (lump) and smaller chunks of wood?

With more info, we can help you more?

Good luck and good smoking.

First off welcome to SMF. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

OK.  This is a "standard" horizontal offset smoker.

Not meant to be a stick burner.

You will be better off with natural wood charcoal (lump) in this unit.  Fist size or smaller chunks of wood added.

Even better for thin blue smoke as compared to the bitter white smoke you are getting, check out the AMNPS here:

Stick with us!  Lots of helpful people here!  Ask questions?

Good luck and good smoking.
