So its really cold here lately and i needed to help out my smoker temps. I added two fire bricks to see if it will help. I've actually got a butt on there right now. So the bricks really help but almost too much. They rose in temp substantially after hitting my 225 in the smoker. It never got above 235 but gradually turning the heat down took 2 hours for it to level off. So to the point here, I put the bricks on a rack above the amnps a couple inches. Well I noticed not much smoke coming out a few min ago and opened the door to see all the pellets almost burnt through. They didn't even burn through the rows just all at once. Not sure what happened. I did preheat the pellets in the smoker this time before I lit them. Don't know if it was that or the brick being above it? My question now is do i fill it back up or do i risk to much smoke in the meat by doing that since it got basically a 10 hour dose of smoke over three hours? I did take the brick above the amnps out just in case.
