Ok, this was my 2nd smoke so far with the MES 30 and the AMAZN pellet smoker. I did a batch of ribs. Since I was not sure how they would come out I just did a single small rack.
Did my own rub and set in fridge overnight. Set MES to 225 and did a 3-2-1.
They came out real good. I did the last hr with hickory chips and let the AMAZN burn out. The chips shure do smoke more then the pellets and added a TON of smoke flavor the last hr.
Just tossed in.
3hrs into it then foiled for 2hrs.
Finished just it time for dinner.
My wife really like them. My self to much like work for little meat.
Next I think will be my venison pepper snack sticks. I just bought the Hi Mountian pepper stick package comes with casing, seasoning, and cure.
